London is a good place to find some of the best foods in the world. The recent Specialty and Fine Food Fair at Olympia 2-4 September had superb foods from all over the world.

The Hebridean Smokery and farms are on North Uist in the Outer Hebrides with clean Atlantic waters flowing off the West Coast.
They smoke salmon, scallops and sea-trout in peat smoke which leaves the most wonderful aroma in the fish.
The heady aroma of peat percolates the delicate fish. I have not tasted better smoked salmon. I agree with Pru Lieth who said the products of the Smokery were ‘The best in the world’ (Pru Leith, OBE). Albert Rue commented ‘a beautiful product, in a world of its own’.
The fish are farmed, in the waters of the West Coast of North Uist in larger than normal pens stocked at much lower density. They have a current to keep them exercised and so stay lean. No white streaks – like marbling - on Hebridean Smokery salmon.
The samples they offered were of the most heavenly peat smoked salmon; the finest smoked salmon I have ever tasted.
